- Add mimo-v2-pro (text, reasoning, 1M context) and mimo-v2-omni
  (text + image, reasoning, 262K context) to the Xiaomi provider catalog
- Switch API from anthropic-messages to openai-completions and update
  base URL from /anthropic to /v1
