docs: fix Mintlify links with correct case

Fix relative .md links to absolute routes with correct uppercase
filenames as required by Mintlify docs system.

Changes:
- ./THREAT-MODEL-ATLAS.md -> /security/THREAT-MODEL-ATLAS
- ./CONTRIBUTING-THREAT-MODEL.md -> /security/CONTRIBUTING-THREAT-MODEL

Note: Routes are case-sensitive based on actual filenames.
